Oh Yummo! Here is a favorite of mine!

King Ranch Chicken

4 cups cooked diced chicken

2 cans Rotel tomatoes and green chilies

2 cans Campell's Cream of Mushroom soup

2 cans Campbell's Cream of Chicken soup

1 can chicken broth

2 packages Old El Paso soft flour tortillas, cut in small pieces

2 large onions (I omit this cuz we don't like 'em)

2 cups grated Kraft's Sharp Cheddar Cheese

Mix Campbell's soup, Rotel tomatoes, and broth together. Layer the chicken, soup mix, and tortillas in a greased 2-quart casserole. Add onions (if you used them). Bake at 350 degrees for one hour. About 15 minutes before the dish is finished, add the cheese and continue baking.

Serves 16. Recipe can be multiplied or divided. Serve with a dollap of sour cream and guacamole. Add a side of re-fried beans and you are set.

Now it is not the prettiest dish I have ever made, but it is one of the tastiest.

This freezes well too. Yummo!

Three Things You (Probably) DO NOT Know About Me

1. I got to pet this hummingbird. If you DO know me, you certainly know these ARE NOT my hands because I ALWAYS (almost always) have my nails done. The man (whose hands are in the picture) was banding the birds in Holly Springs, Mississippi in conjunction with the Audubon Society and he DID NOT offer to let me hold the hummer.

 

2. I love my morning cup of coffee with Land O Lakes fat-free half & half. Seriously, how do they make fat-free half & half at Land O Lakes? Really, I don't care how they make it but I do love it in my first cup of coffee. Yumo! As a subpoint - I drink my coffee so slowly that it often ends up COLD so a metal coffee cup is the best choice for me. I have lots of different mugs that I love but this particular one is from my church, Bellevue Baptist in Memphis, TN. I love Bellevue Baptist and I love coffee with fat-free half & half.

 

3. This is my sister, Mary Lou, and me taken about 3 years ago. My sister, Mary Lou, and I are married to brothers. That's right . . . brothers. Mary Lou is married to Craig's brother, Terry. They began dating after they met at our wedding in 1974.

 

4. Okay, so I got 4 things you probably DO NOT know about me. Sue me! My very FIRST book signing ever, was at BARNES AND NOBLE in Memphis for my first Bible study for MOMS, "Proverbs and Principles for Parenting Practically Perfect Progeny" and my second one, "Run Well, Finish Strong" (November 2007). I do LOVE to teach MOMS. Seriously. Love to teach MOMS.

 

So there you have it. Three things that you probably DO NOT know about me and may not care. Seriously. You simply may NOT CARE. That is okay because there is only ONE THING about me that matters. The most important thing to know about me is that I know and love the LORD JESUS CHRIST! I long to be conformed to HIS image. He is my ALL and ALL! Click here for more about THAT.
