Are you tired of all the traditional holiday foods? Here is a pleasant and easy change.
Taco Soup
2 pounds ground beef
1 large onion, chopped
1 can pinto beans
1 can black beans
1 can whole kernel corn
1 can Del Monte diced stewed tomatoes - mexican style
1 can Rotel tomatoes
1 pkg. McCormick Taco Seasoning mix
1 pkg. original Hidden Valley Ranch dressing (dry)
2 1/2 cups water or more, to make soup broth
Preparation: Brown ground beef and onions in a large pan, drain off fat. Drain all the vegetables and add. Add remaining ingredients and simmer for an hour or so. I serve with shredded Cheddar cheese, crushed Tostotioes, and a dollop of sour cream. OR make your favorite cornbread to serve alongside. Freezes well.
