Shrimp Chowder
1/2 stick of butter
1/2 cup of green onions chopped
8 oz cream cheese
16 oz half and half
2 cans cream of potato soup
1 can cream of mushroom soup
2 cans corn (undrained)
1 lb. shrimp
This is from my buddy and fabulous cook, Darlene Stroud. I do not add the green onions. I also used light cream cheese, fat free half and half and the reduced fat soups.
Melt butter, add onions, cook until tender. Add cream cheese, mix and stir until melted. Stir in soups and corn. Stir in half and half. You can add some milk as well depending on how thick you like it. Cook until hot. Add shrimp and simmer a few minutes more. Oh so good!
